One of the main reasons for this juicier piece of meat is down to the age of the cow. In the UK we slaughter at 30 months…mainly for economic and health reasons while the steaks grilled over hot coals in the Basque Lands come from cows around 8 years old. Vaca Vieja means Old Cow. The older cow is not as lean as her younger counterpart in the UK, she is fatter and this extra fat equates to extra flavour.
