So impressed by what we had seen in Elkano, we contacted them earlier this year to ask if our Head Chef Damian could come and work alongside their Chefs for a few days to learn more about what they do. Happily they agreed and in February Damian returned to Elkano, this time with his Chef jacket on.
There was a sense of apprehension as we did not what to expect, did the Chefs speak English, how much of their knowledge were they willing to share? However, after the first service our fears were laid to rest as the hospitality the staff showed to Damian was very warm and their unique methods of preparing and grilling fish were shared in full. Language was no barrier. When the service was over they invited Damian for a few drinks long in to the night, stories shared about life and work in London and Getaria.
The staff at Elkano are humble about their success. The story of the restaurant goes back quiet some time, they celebrated their 50 year anniversary last year and much homage was paid to the founder Pedro Areggui who sadly passed away in 2014. The legacy of Elkano lives on through the son, Aitor, whom we all wish to thank for this once in a life time opportunity.
