_ So here we are, one week away from our trip to San Sebastian with Team Donostia (currently consisting of co-owners Melody & Nemanja as well as chefs: Head, Sous and Chef de Partie).

Whilst in San Sebastian we are on a bit of a dual mission (one for us and one for our chefs); however the overriding theme is one of discovery.  We are lucky to be working with some great restaurants and pintxo bars in San Sebastian and our chefs will be joining them for some informal training and to gain inspiration.  Conveniently whilst we are there, the Gastronomika Fair is taking place, chefs meet at this annual event to share ideas and advancements in the culinary world.  Whilst we are by no means intending to have laboratory-esque cuisine, it’s still great to go and see what’s happening on the forefront of cuisine.

Whilst our talented team of chefs are discovering in the kitchens, we’ll be driving around in our van on a sourcing expedition. We decided to take a van because we need samples, ok a van is a lot of space to fill but we might get hungry on the way back too. We are targeting new products to import in areas that we are familiar with, such as wine, and also things we know a bit less about importing i.e. food.  So it’s going to be a huge trip of discovery for all of us.  When the team return (mid-December) we’ll be finalising our menu and will let you know some of the dishes you can expect from us.  By then we will also have news on the development of our premises we are waiting so patiently on and *should* be close to moving in! We are excited to get started; it’s been a long wait.

We’ll also announce who our head chef is once we arrive in San Sebastian.

Good luck with the trip. If there is one thing that you can find in donosti it´s gastronomic inspiration!!
