We have been getting very excited lately about charcuterie from the Basque Kintoa pig.
The Kintoa is a type of Iberian pig and referred to as the 'pie noir'. They snack on acorns, beechnuts & chestnuts which are commonly found in the area. This gives the charcuterie a distinctive and deep flavour.
A man for whom we have great admiration, Pierre Oteiza, started a project some two decades ago to breed the pigs and boost the local production of charcuterie when the number of Kintoa pigs was dwindling. As you can see from the picture on the right, they now have some very nice droves of pigs! Pierre has since established an association for the Basque pig farmers in the Aldudes Valley and applied for for the ham to be recognised under AOC status.
